The dough takes about 1 to 2 days to make depending on the resting time one wants to give. The more resting time increases the quality of the dough. Firstly flour and water is lightly mixed and rested for some time. The dough is kneaded and given a found shape to be placed in a jar full of flour to rest at 27° to 32° C for 24 hours. The initial process is repeated again but with a tiny increment of a small portion of premade sourdough. The previously rested dough portion makes the next batch richer and well fragmented.
